Somehow light desserts seem to be a part of summer.
But, those in the know tell us they're not good for us, and they're fattening, they say. But is this the whole picture? What about other variables, like ingredients and portion size? I mean really, should we throw the baby out with the bathwater? And who are they and those in the know? |
If they don't know the pleasure of a truly delightful little dessert during the summer; if they don't know that broccoli and cauliflower will always be eaten more readily if capped off with something cold and luscious; if they don't subscribe to the theory that life is short, so start meals with a really good dessert, then how can they presume to be authorities on this?
Could it be that they really need to revamp the creative side of their brains?
But I have to admit, I still think of them with great affection. And, I feel a sense of puzzlement, loss and betrayal. After all, my entire family had zero weight problems. Dessert was expected, every day after dinner. If you didn't eat anything you considered unappetizing, it was logical to assume you wouldn't have enough tummy space for the dessert.
Where did it all go so horribly wrong?
We had trifle, jello made with real squeezed orange juice, chocolate blancmange, molded with a bit of jam in the middle. There were fruit salads, with cream of course, chocolate eclairs, and banana fritters. The cream seemed to be obligatory with all of them.
Then there were the swiss rolls, the golden steamed puddings and creamy deluxe rice pudding, slowly and lovingly baked in the oven, with a topping of nutmeg and cinnamon. And, fruit pies of course--that goes without saying.
A little revolt and seasonal liberty!

It's something small enough that even they wouldn't really be able to quibble over!
The ingredients are simple and so is the recipe. That's why it qualifies as one of our special bachelor recipes.
I have to tell you though, don't use those ultra-thin virtuous chocolate cookies as I did. They crack, as you see in this photo. Cracking is not good, but wow, even these taste unbelievable. I mean it!
A special banana hint
Just put the bananas into a white plastic bag, like a kitchen trash bag before you refrigerate them. Don't ask me how it works, but it does!
Sorta ice cream sandwiches
- 16 cookies, homemade or bought - your choice.
- 1/2 cup Ricotta cheese
- 1/4 cup plain yoghurt
- 3 Tbs. sugar
- couple of drops vanilla essence
- 1/2 ripe, peeled banana
- 2 tsp cocoa
- 2 Tbs coffee cream or milk
Plunk the last 7 ingredients (NOT the cookies!) into a blender. Blend until smooth. Put into a small bowl and freeze, stirring a couple of times. (Try not to lick the spoon, this stuff is addictive.)
Lay out 8 cookies on your cutting board, if you have one, or your counter. Thaw the frozen mix briefly, then divide it and spread on the cookies. Top with the other 8 cookies, pressing down gently.
You now have 8 servings of the most delectable dessert you can imagine!
